I truly believe it’s a “dream job” to save a piece of history and bring the beauty of the farm to countless others to appreciate.
I grew up working on my family’s large vegetable farm and followed multiple generations of family members attending Cornell University where my great grandfather taught Agricultural Engineering. While my degree is in business, I’ve always enjoyed taking hospitality related classes in Cornell’s famous school of hotel management, as well as teaching riding classes at the Cornell Equestrian Center.
During and after college I worked in Fortune 100 companies for years. While it was a great learning to lead groups of people and manage multi-million-dollar categories, I realized my passion was elsewhere…

I’ve always loved travel and have found many excuses to go see the world and explore new sights, cultures and architecture, especially their barns. My sister and I had regularly traveled to Europe to further develop our riding in some of the oldest academies in the world. Whether riding under the grand chandeliers in Amsterdam, the old stone barns in Slovenia, or the gorgeous Mediterranean hillsides of Portugal, I’ve always appreciated the architecture of various barns and stables and wanted to bring a piece of that home. We have incorporated various aspects of the old European barns in the renovation designs.

We are truly blessed to have a wonderfully supportive Dad, who loves his daughters and performed the majority of the work at the Sablewood using his wealth of talents.
A lifelong farmer of the Schoharie Valley, he ran Shaul Farms, a two thousand acre family vegetable farm for over 25 years. He is also a former President of NYS Vegetable Growers Association, and is well known in the Agricultural Industry for designing new equipment and sustainable methods to preserve the land for future generations.
Now retired from full-time farming, he continues to bale hay while restoring the Sablewood property. A true craftsman, his signature style of purposeful function married with beautiful aesthetics is present throughout the property in the custom lighting, barn doors, and furniture. He single-handedly completed the majority of the construction on the Charlington, our new white barn, which we named in his honor.
With a warm smile, a humble nature, and a dedication to his family, he loves to chat with guests and share stories of his latest projects, and delights in seeing guests enjoying the property.

As fifth generation family farmers of the Schoharie Valley, we have a proud agrarian heritage and continue this tradition today growing 75 acres of hay, garlic, and extensive flower gardens. We love our land, the rich history, and the people who dedicate their lives to serving it. Living green and supporting our local communities is deeply ingrained in everything we do — from sustainable farming practices to modernizing our venue for energy efficiency, selecting talented local vendors, and reusing and repurposing materials in our venue and wedding décor. Those “too many horses…” they eat a lot! We have always made our own hay so I’ve grown up stacking thousands of bales in the barn every year. We jokingly call unloading hay “your free gym membership” but the experience has also been invaluable in planning the barn restoration. I learned early on that climate control is a must for elegant events!
I am so fortunate to have a very supportive family! My super talented Dad will tackle anything from excavating to building, carpentry, electrical, plumbing, welding and even creating custom lighting & furniture. My wonderful sister has a great eye for design and spends every free hour working on the barn. The barn restoration would not have happened without them and I am forever grateful.
Animals have always been some of my favorite companions, especially my dog and horses. A girl can never have too many horses!
I grew up just down the valley in a beautiful small town. In fact, the town consisted of the post office/general store and our family farm!
